Appetizer: Artichoke Dip:

1 Can Artichokes

1 Cup Hellman's Mayo

1 Cup Parmesan Cheese

1/2 Tsp. Garlic Powder

2 Cups Mozzarella Cheese

Mix together; Bake at 350 until bubbly. Serve with crackers.

 

Pat Fullriede: Good-Bye Turkey Casserole:

3 Tablespoons butter

2 Tablespoons all-purpose flour

1 (12 fluid ounce) can evaporated milk

1 Cup water

1/4 teaspoon salt

1/4 teaspoon freshly ground black pepper

1/4 teaspoon onion powder

2 Tablespoons butter

1 Cup finely crushed herb-seasoned dry bread stuffing mix or left- over stuffing

1 Cup cooked, diced turkey meat

1 Cup shredded Cheddar Cheese

2 Cups leftover mashed potatoes

Preheat oven to 350. Lightly grease a 9 x 13 inch baking dish.

Melt 3 tablespoons butter in a saucepan over low heat. Blend in the flour. Slowly stir in evaporated milk and water, then season with salt, pepper, and onion powder. Stir sauce over low heat for 5 minutes.

In a separate saucepan over low heat, melt 2 tablespoons butter, Blend in the dry stuffing mix. Place the turkey in the prepared baking dish. Pour the sauce over turkey then sprinkle with Cheddar Cheese. Spread mashed potatoes over cheese. Top mashed potatoes with the stuffing mixture.

Bake 45 minutes in the preheated oven.

 

 

Teresa Pavesich: Chocolate Raspberries:

Dolci frutta - hard chocolate shell (found in the produce section at Jewel)

Clean dry raspberries.

Heat oven to 150-200 degrees. Place chocolate disks on parchment lined baking sheet. Place dry raspberry on top of disk. Put in warm oven until disk is soft, it takes about a minute or less in the oven. (Can be done in a microwave but oven works best). Remove from oven, gently press raspberry into the disk. Let disk harden, at room temperature is best. Can be refrigerated but chocolate may discolor.

 

Note: I used the large container of raspberries from Sam's Club and it made 90 - 100+ berries. There were about an equal number of disks in the 8 oz. Dolci frutta container.
